Bacon and Clams Pizza

Makes 2 pizza
For Jim Lahey pizza dough:

3 3/4 cups (500 grams) bread flour
2 1/2 teaspoons (10 grams) active dry yeast
1 teaspoon (5 grams) salt
1 teaspoon (5 grams) sugar
1 1/3 cup (300 grams) water, room temp’
XV olive oil
For the bacon and clams topping:

36 littleneck clams, cleaned
2 shallot, finely chopped
2 garlic clove, sliced
1 cup dry white wine
2 sprig thyme
1 lb bacon, sliced
1/2 cup crème fraîche or sour cream
1 tablespoon flour
2 egg yolks
parsley, chopped
XV olive oil
